I’ve been daydreaming of another festive feast ever since we threw an 18th Century Scottish banquet. I love history, but particularly food history. I find it fascinating and honestly quite depressing to see how we have strayed so far from wholesome, local, nourishing foods at our family tables. Yes our ancestors often went overboard with their lavish meals and I’m not looking to stuff a swan with 430 song birds anytime soon, but I do love the significance of high-quality animal foods and seasonal produce. I adore the inclusion of spice and fruit with savory dishes and how liberally animal fats and gelatin stocks were used to impart flavour in all meals.
