We are 3 weeks deep into our Mexican spring sailing trip and are very much enjoying the pace of life and the warmth of the water. Trevor has been like a kid in a sweet shop in regards to fishing; not only do the fish actually resemble lucid-colored candy, but they are so abundant that you really do get to be picky!
We’ve tried Finescale Trigger Fish in a green ceviche which we enjoyed immensely. We grilled Cabrilla whole for lunch and panfried French-style for dinner. We’ve barbecued Giant Hawkfish for fish tacos which was by far our favorite, and last night we dined of Graybar Grunt, sautéed in oodles of ghee, garlic and capers. I hope we catch another Hawk Fish, because that was one of the juiciest and meatiest white-fleshed fish we have ever eaten.
